In preparation for the shrimp rolls, in the following recipe, you will want to make these butter poached shrimp. It's not mandatory to use these for that recipe, but I strongly recommend it. These buttery, garlic-y morsels bring so much added juicy flavor, you will want them. Even if you don't use these to make shrimp rolls, these make delicious ceviche, salad or even just a snack. Regardless, you should make this.

prep time: 30 minutes
cook time: 10-12 minutes
total time: approximately 40 minutes

Ingredients 
3 lbs 26/30 raw shrimp
3 sticks or 12oz salted butter
6 cloves smashed garlic
2 cups water
1 tsp salt

Tools:
medium saucepan
pairing knife for cleaning shrimp

  1. Start by peeling and deveining the shrimp. This is the most time consuming part of this recipe. If you don't have the time to dedicate to this step, or just don't feel like it, no worries, just buy shrimp that is already peeled and cleaned.

  2. Next, in a medium saucepan, bring the water to a boil.

  3. When the water comes to a boil, reduce to low heat and add the butter and garlic.

  4. After the butter has fully melted, add the shrimp. The shrimp should be fully submerged. If it is not, cook it in batches.

  5. Cook the shrimp for 10 to 12 minutes, stirring occasionally

  6. Serve and enjoy!

    1. If you are using this for the shrimp rolls, set aside to cool
