Bacon and Jalapeño Deviled Eggs

Continuing with the appetizer/finger food theme, this time I'm highlighting deviled eggs. In my opinion, a party isn't a party without them. They are such a simple yet essential piece. Not to mention the topping options are endless. There is nothing wrong with a basic deviled egg but add a topping or two and you've taken them to a whole new delicious level. I made these bacon and jalapeño ones for our housewarming a couple weeks ago and they were gone before I could blink. Not much of a shock, anything with bacon is sure to be a crowd pleaser. And don't be intimidated by the jalapeño; since it is thinly sliced, it only gives off a very mild heat. Even non-spicy food lovers can enjoy these.

yield: 24 deviled eggs

Ingredients:
1 dozen (12) eggs
real bacon bits
1 jalapeño
1 tbsp mayo
1 tsp yellow mustard
pinch of salt & pepper
1/4 tsp sugar
pinch of paprika

Tools:
fork
small mixing bowl
pairing knife
ziplock bag for piping

How to prepare

Start out by boiling the dozen eggs. If you aren't already familiar with how to do this, I have a fool proof way of the perfect hard boiled eggs. Gently place the eggs in a medium sized saucepan. Next, fill with enough water to cover the eggs. Bring the water to a rolling boil for about 3 minutes. Take the pan off the hot burner, cover and let the eggs sit for 15 minutes. After the 15 minutes, immediately place the eggs in a bowl of ice water until they have fully cooled down. You now have hard boiled eggs!

Cut the hard boiled eggs in half length wise and remove the yolk and place them in a small mixing  bowl. Place the egg halves on a serving plate. Once all yolks are in the bowl, add the mayo, mustard, sugar, salt and pepper. Using a fork, mix until smooth and all ingredients are well incorporated. 

Next put the mixture in a ziplock bag. Try your best to keep it in one corner of the bag. Now, cut the corner of the bag so that you can use this your piping tool to fill the egg halves. When your eggs are filled, they are ready for the toppings. 

Sprinkle each egg with a pinch of paprika. Next sprinkle the bacon bits. Lastly, thinly slice the jalapeño using the pairing knife and place a slice on top. Now enjoy!
